I can’t believe that it’s been three months and 17 days sense my last blog….oppppps guess I should do better!
Lots of things going on. Training for my next 10k, garden is getting started and seedlings are growing more everyday. Going to be starting a new live Facebook chat in the next few weeks talking about my garden and how easy it is to have one :0) Well I think it is. My cousins think so too :0)
Spring brings out all the could be’s. Everything in the yard is waking up, the birds are singing there songs and I for one am filled with hope of a great garden season :0)
Here is what I’ve been up too the last few months…cold weather, Photography, learning my dulcimer, cooking, celebrating family bdays and Mr P. I’ll share the garden with you later :0)
Here’s too new adventures!
Wow 2017 is going to be over in a few hours and I have had some time to think about the last year. I have gotten in better health! Walked not one but two 10ks this year! Went on a great vacation for Sanibel Florida! Planted a wonderful garden. Made better choices for my eating! Kept my blood pressure under control. Had family come and visit at my house for the first time ever! And my business did pretty well this last year as well! I have had a pretty blessed year really!
As 2018 comes rushing in I want to take a few minutes and share what my plans are for the new year.
Business wise I am taking a Master Class and learning more about portraits and getting more candid photos of my clients. Try and get there natural appearance. Even going to work on selling some of my work. Reading the Photographers Market 2018 book and going to get my work out there a bit! Starting January off with promo photos of a client for her new radio show…so exciting!
Still going to work on my health. The gym a few days a week and then some added stretching at home. I plan to walk the Air Force 10k again in 2018 and walk it a bit faster than in 2017. A few 5Ks I’m sure are going to happen as well. Plan to keep taking inches and weight off my body and continue to cook more at home for me and the family.
Going to spend time with friends and family in 2018. Going to try and make a schedule to see people that I have missed this last year. Even if it’s a FaceTime chat. Life is to short not too!
I am taking time for me in 2018. Whether it is a walk, a trip to the gym, some quiet time or what ever I am adding this to my life in 2018. It will help my mind to me healthier as well.
May 2018 be blessed beyond all our imaginations. May we all be healthier than we have ever been and may we be doing what makes us happy!

I must admit I was very skeptical about making chicken and dumplings in a pressure cooker. After seeing all the new people in a Facebook group I belong to post recipes I was like…hmmmmm…I have everything I need to make that let’s try it so I did.
Got all the ingredients together
• 2 cups chicken broth
• 1 cup water
• 1 teaspoon olive oil
• 1-1/2 lbs chicken breast, cubed
• 1 tube (16oz) refrigerated biscuits
• 1 cup chopped carrots
• 2 teaspoons oregano
• 1 teaspoon onion powder
• 1 teaspoon basil
• 2 cloves minced garlic
• 1/2 teaspoon salt
• 1/2 teaspoon pepper
The recipe on line called for a cup of peas but Im not a fan.
I also didn’t use the garlic cloves and just used garlic powder with my chicken…a teaspoon.
Then I really did follow the recipe
- Chopped the biscuits before I cooked the chicken so they were ready to go
- Cut my chicken breasts in smaller square pieces and sautéed in the olive oil till they were done
- While chicken is cooking throw in the spices and brown the chicken
- Turn off cooker and add broth and water.
- Add the carrots
- Add the biscuits
- Stir it all together and put the lid on.
- Seal the lid and set on manual for 5 minutes. It will take 5-10 minutes to come to pressure.
- Once 5 minutes is up so quick release
- Open lid, stir and serve
The flavor was really good! I think I would have liked a little more liquid so I’ll add a bit more next time but really good meal. Enough for two bowls of left overs after feeding three people!
This spring I planted tomatillos in the garden. I went out to the garden and got all the ripe tomatillos off the vine. So I gathered the ingredients I needed to try and make Verde Salsa. I got out the blender and the food processor to help chop things up.
Here are the ingredients you need:
10 cups of tomatillos
1 Med onion chopped
2 teaspoons garlic
1/2 cup cilantro
1 tbsp of lime juice
A little bit of a jalapeño pepper
(But wait there is more)
I cut the tomatillos in half and roasted them cut side down in a pan that I covered with aluminum foil. I figured there would be juice and I was right.
I put them in the oven on broil for 7 minutes and checked them. Ended up putting another minute and a half on them.
While this was going on I sautéed some yellow onion and garlic.
Cooked till it was translucent and then sat both the tomatillos and the onions aside to cool off. I put them in a bowl. After taking the tomatillos off the pan I poured the juice into a bowl just incase I need to make the salsa more saucy.
Then I put it all in the food process (was gonna use the blender but didn’t think it was big enough.
Tasted it and it needed some help…I added 1 ripe mango, 1 medium size yellow tomato, 1/2 of a grilled peach, 1/2 a grilled nectarine, 1/2 a lime, 1&1/4 tablespoons course salt, 1 small roasted red pepper, 1/2 of a green onion, 1 teaspoon of cumin, 1/2 teaspoon of smoked paprika, 1/2 teaspoon of chili powder, another small magi and another yellow tomato. Then and only them did it Taste good enough to eat.
Then I canned some of it!
We will have some for this winter!
So I am not a vegetarian but the wife is. We thought we would give vegetarian pulled pork a whirl. Well I cheated. I bought a bag of Morning Star pulled pork. Added a bottle of Stubbs Hickory Burbon sauce and thru it in the pressure cooker with a cup of veggie broth. Pushed the chicken button on the pressure cooker and waited for it to come up to the right pressure. It cooked for 22 minutes. Released the pressure and…..
Smelled just like pulled pork! She ate two sandwiches:0) we will call this a keeper! What shall I make next?
As we each know in our own way, we sometimes take a step forward to take 2 steps back. I have fallen and gotten back up more times then I can remember but the good news is I have gotten back up.
Physically I have been slowed down to a crawl for the last 3 weeks. I took my shoe off and caused a tendon in my foot not to be happy. Moon boot has been on and it is getting better but not as fast as I would like. With that being said I have been able to get my mind and heart a little better in tune with what I want to see happen in my life.
I am a procrastinator. I have all these great ideas and my follow thru has been terrible. Thru this whole sit on my behind and rest phase of life I have been able to organize my thoughts a bit better and get a grasp on what I need to get better at in this regard. I am working on getting my cards on Etsy and eBay….Ill share that with you when I get the stores published. I did become a business last month.
I will be doing better for my health as well. I have put me on the back shelf to get other things done and I am telling you that that is changing. If I don’t take care of me no one else can.
With that being said I am ready to re commit to giving the world the best me that I can. Be looking for more updates!
One day at a time!
So I have been walking again. I know its bout time but I am doing this and feeling good about it again :0)
Last week I logged 28.74 miles and 66,620 steps. I feel good about it too!
One step is better then one more second on the couch for me. I was going to skip it today and just sleep in but God had other plans. I woke up from a crazy nightmare and thought well I’m up I might as well walk it off and I did! Saw a beautiful sun rise. I am blessed.
I am drinking more water again and eating better and am feeling good! Started measuring again this week so I will get back caught up with that on my next blog. Watching my BP. I am on meds but my BP is way low compared to what it has been to get me on said BP meds. I go to the Doc in 3 weeks and I am going to talk to her about that. If it stays low I may have to adjust by calling her. We shall see. My BP after a 1.5 mile walk and a 25 minute bike ride in the humidity was 117/63 that seems a bit low but Im watching it.
Other then that life is what it is.
I made zucchini bread from scratch. Let me tell ya it was WONDERFUL! Neighbors liked it and I am taking a piece to my dad and sister the rest well….its mine :0)

As I have been putting together my last papers for College I have been reminded time and time again that life is to short to not take a minute and reflect on how far I have come in my life. I am getting ready to Graduate College, something I did not think I could do after being out of high school for so long. I have a family that supports me in everything that I do. Wish everyone had that :0)
I wish I could share this with my mother. She passed many years back and I know how very proud she would be of me following thru and walking across the stage to get my diploma. She will be looking down along with some of her friends and I will feel her wonderful smile and I will have a great peace knowing that.
On another note I am back to walking again. I did come off half of my BP meds due to exercise. You gotta love that. Doc thinks that I will be off more meds in 6 months if I lee this up. I am all for that. I still haven’t lost weight but I have seen more inches off my body. She told me to throw the scale in the trash. I am taking the one I bought back. She is right if my clothes fit looser then I am doing something right. We did decide that my body may think it is starving tis self so I am eating a bit more. That seems to be helping as well. My body needs more than 1500 calories. Not many more but a bit. I am also cutting out some carbs. That should help too. Still laying off the three pops a day and having maybe one a week and not a whole one :0)
I am ready for this last cram week to be over. Exams next week and then next Sunday is graduation. Then on to a new chapter in my life. Bring it!
An update is in order.
Still no weight loss…talked to the doctor about it this week and she says as long as inches are coming off don’t worry about the scale…so I’m trying to remember that and not worry about that.
That being said…I lost 2 more inches off my body since the last blog.
1 inch off my abs!
1 inch off my hips
1/2 inch off my waist
We are so calling that a win!
Got my 10,000 steps in most every day!
Been working in the garden and can’t wait for some fresh veggies!
I did manage to get off half of my BP meds we are going to call that a win as well.
So all in all it’s been a good few weeks!
Graduation is right around the corner and I am so ready for the next stage of my life to begin!
Gotta get the bike tires pumped up and we can add that to some cardio!gonna be a busy couple of weeks but I am ready to head into things head on!
This is our year….let’s keep on keeping on!
As I sit at the computer taking a small break from studying I am reminded that in just 2 short months I will be a college graduate. Wow this is like a dream. It seems like yesterday that I was walking into Sinclair Community College and talking to them about what my next step in life was going to be. I am 5 pages away from having my Capstone finished for my degree and 6 tests away from being done with my associates degree. That may not sound like a lot but to this “GIRL,” it means everything.
I am firm believer that if you think you can do it then you can. Will you catch on right away? Maybe, but most likely not. I have had to learn to be a better me and for that I am changed for the better for sure.
I am eating better and seeing the inches starting to come back off. Keeping a food journal has been helping for sure. Trying to stay under 1500 calories is getting easier now that I have my snacks all made out for the week :0) I am down to my original measurements so I am good with that. Now to get a scale that works correctly :0)
Spring has finally stepped in and giving us a bit of sunshine and I am thankful for that. For a lot of reasons. One I can get out on the bike path again and I can start walking the dogs in the mornings again.
One day at a time. That’s all we can do…Really one breath and one heart beat. With that have a great day!
