I’m ready for spring….

I had to get some plants in some dirt. I needed to feel something growing and watch it burst out of the ground. I got my wish..

That was after just three days. March 2nd I started sowing the seeds and by the 5th I had growth. Yesterday was the 17th and this is what I have.

15 days and I have sprouts everywhere. It’s looking like everything but the tomatoes will be ready soon….opppps however I’m going to put them in a bigger container till after Mother’s Day. Here in the 937 it’s not safe for them to be planted. We usually get just one more good frost right before Mother’s Day. Last year we planted a week before and lost two beds full of plants due to frost.

My cousins run a Facebook page called Beginner Foodie and I will be live streaming on there and sharing blog posts. Showing people how easy gardening can be and how they too can go Garden to table. For those of you finding my blog I hope you enjoy it as much as I like writing it.

Where has the time gone

I can’t believe that it’s been three months and 17 days sense my last blog….oppppps guess I should do better!

Lots of things going on. Training for my next 10k, garden is getting started and seedlings are growing more everyday. Going to be starting a new live Facebook chat in the next few weeks talking about my garden and how easy it is to have one :0) Well I think it is. My cousins think so too :0)

Spring brings out all the could be’s. Everything in the yard is waking up, the birds are singing there songs and I for one am filled with hope of a great garden season :0)

Here is what I’ve been up too the last few months…cold weather, Photography, learning my dulcimer, cooking, celebrating family bdays and Mr P. I’ll share the garden with you later :0)

Another year is done

Wow 2017 is going to be over in a few hours and I have had some time to think about the last year. I have gotten in better health! Walked not one but two 10ks this year! Went on a great vacation for Sanibel Florida! Planted a wonderful garden. Made better choices for my eating! Kept my blood pressure under control. Had family come and visit at my house for the first time ever! And my business did pretty well this last year as well! I have had a pretty blessed year really!

As 2018 comes rushing in I want to take a few minutes and share what my plans are for the new year.

Business wise I am taking a Master Class and learning more about portraits and getting more candid photos of my clients. Try and get there natural appearance. Even going to work on selling some of my work. Reading the Photographers Market 2018 book and going to get my work out there a bit! Starting January off with promo photos of a client for her new radio show…so exciting!

Still going to work on my health. The gym a few days a week and then some added stretching at home. I plan to walk the Air Force 10k again in 2018 and walk it a bit faster than in 2017. A few 5Ks I’m sure are going to happen as well. Plan to keep taking inches and weight off my body and continue to cook more at home for me and the family.

Going to spend time with friends and family in 2018. Going to try and make a schedule to see people that I have missed this last year. Even if it’s a FaceTime chat. Life is to short not too!

I am taking time for me in 2018. Whether it is a walk, a trip to the gym, some quiet time or what ever I am adding this to my life in 2018. It will help my mind to me healthier as well.

May 2018 be blessed beyond all our imaginations. May we all be healthier than we have ever been and may we be doing what makes us happy!

Bring in 2018! I’m ready!

Verde Salsa

This spring I planted tomatillos in the garden. I went out to the garden and got all the ripe tomatillos off the vine. So I gathered the ingredients I needed to try and make Verde Salsa. I got out the blender and the food processor to help chop things up. 

Here are the ingredients you need:

10 cups of tomatillos 

1 Med onion chopped 

2 teaspoons garlic

1/2 cup cilantro 

1 tbsp of lime juice 

A little bit of a jalapeño pepper

(But wait there is more)

I cut the tomatillos in half and roasted them cut side down in a pan that I covered with aluminum foil. I figured there would be juice and I was right.

I put them in the oven on broil for 7 minutes and checked them. Ended up putting another minute and a half on them.

While this was going on I sautéed some yellow onion and garlic.

Cooked till it was translucent and then sat both the tomatillos and the onions aside to cool off. I put them in a bowl. After taking the tomatillos off the pan I poured the juice into a bowl just incase I need to make the salsa more saucy.

Then I put it all in the food process (was gonna use the blender but didn’t think it was big enough.

Tasted it and it needed some help…I added 1 ripe mango, 1 medium size yellow tomato, 1/2 of a grilled peach, 1/2 a grilled nectarine, 1/2 a lime, 1&1/4 tablespoons course salt, 1 small roasted red pepper, 1/2 of a green onion, 1 teaspoon of cumin, 1/2 teaspoon of smoked paprika, 1/2 teaspoon of chili powder, another small magi and another yellow tomato. Then and only them did it Taste good enough to eat.

Then I canned some of it!

We will have some for this winter!

Made vegetarian pulled pork

So I am not a vegetarian but the wife is. We thought we would give vegetarian pulled pork a  whirl. Well I cheated. I bought a bag of Morning Star pulled pork. Added a bottle of Stubbs Hickory Burbon sauce and thru it in the pressure cooker with a cup of veggie broth. Pushed the chicken button on the pressure cooker and waited for it to come up to the right pressure.  It cooked for 22 minutes. Released the pressure and…..


Smelled just like pulled pork! She ate two sandwiches:0) we will call this a keeper! What shall I make next?

The journey

As we each know in our own way, we sometimes take a step forward to take 2 steps back.  I have fallen and gotten back up more times then I can remember but the good news is I have gotten back up.

Physically I have been slowed down to a crawl for the last 3 weeks.  I took my shoe off and caused a tendon in my foot not to be happy.  Moon boot has been on and it is getting better but not as fast as I would like.  With that being said I have been able to get my mind and heart a little better in tune  with what I want to see happen in my life.

I am a procrastinator.  I have all these great ideas and my follow thru has been terrible.  Thru this whole sit on my behind and rest phase of life I have been able to organize my thoughts a bit better and get a grasp on what I need to get better at in this regard.  I am working on getting my cards on Etsy and eBay….Ill share that with you when I get the stores published.  I did become a business last month.

I will be doing better for my health as well. I have put me on the back shelf to get other things done and I am telling you that that is changing.  If I don’t take care of me no one else can.

With that being said I am ready to re commit to giving the world the best me that I can. Be looking for more updates!

Jan is on the way out….

Well the month of January only has about a week left so I thought I would update my life changes.

Last week I am pretty sure I had some of that flu crap that has been going around.  But I will get back in the groove soon!

I got signed up for a web design class that is next week.  Looking forward to getting my photography stuff put on an actual web page.  I even signed up for a digital video class.  I am looking forward to seeing what all I can learn.  They will help me to broadcast my own show.  I have a lot of ideas I just gotta get them all out :0)

I have been drinking a lot more water.  Got signed up for the local gym and have been going 3-5 times a week.  Sure does help get me going in the mornings.  Staying within my calories.  I got a scale.  I am only using it once a week when I measure.  So far 2 pounds gone so we are calling that a win :0)

Been putting together an easy store to sell my cards.  I just gotta get the cards together and a catalog of sorts to keep track of what I have.

I am feeling better and better! life is going well….One day at a time.

Well the new year is here and it is going well.
Joined the neighborhood Planet Fitness, have gone 2xs even contacted a personal trainer that will get back with me later in the week.
Eating better or at least eating things that are better for me. Adding fruit and veggies to meals is helping feel full :0)
Yesterday it snowed here in the 937. Spent time shoveling and snow blowing. That was a bigger work out then the gym for sure. Now it’s just bitterly cold. Nieces have only had one day of school this week. Guessing they won’t have it tomorrow either. Gonna be even colder tomorrow…brrrrrrrr
I had forgotten how much energy I get from walking in the mornings. I have been cleaning today like no bodies business. It’s been crazy.
Resolutions are going well! I know only 7 days in but you know I feel good about it!
The dogs have been barking and acting crazy all day…they hate the vacuum. After I shut it off this was Luna….

End of 2014

Wow what a year.

I received my college degree in May! Never really saw that happening!  Wooop Wooop!

Got to see Sanibell Island. Got to see my first in the wild alligator. He was a pretty quick fella!

I am truly blessed to have so many people in my life to help me on my journey.

I dropped 14.75 inches off my body in 2014.  Never to be seen again.  I don’t own a scale so that update will come in Feb when I go back to the doctor.

Thank you for being a part of my blogging life.  I have enjoyed sharing stories with you and hearing your comments.  Ive enjoyed getting to know you along the way as well.

Here is to a 2015 that is full of dreams fulfilled and love beyond our imagination. See you next year!

Playing back Christmas pictures….

As I sat this morning cleaning off my memory cards from Christmas I came across this one.

This is what we have instead of stockings full of stuff.  As my father tells the story this is what his treat was as a child.  My father grew up in Newhall West Virginia and is one of 13 kids.  They each had a brown paper sack on christmas morning that had one apple, one orange, some walnuts, a candy cane and some sort of candy that they liked.  My father has continued this tradition with us. He now just sets it on the table but the Memory is still there.  We snack on this while we are waiting to open gifts and through out the holiday season.

I love that I have so many memories from my childhood that are still in effect today!  Makes me truly blessed!
